                            Red potatoes are a perfect choice for soups and potato salads because of their firmness and texture. They can be baked, roasted & fried, potato salad, and added to soups. Do not refrigerate or freeze uncooked potatoes as this changes the potatoes' starch into sugar. Red Potatoes are Fat-free, Very low sodium, Source of fiber, High in vitamin C, Cholesterol-free.

                            Eight Ball Squash

                            Eight ball squash are a hybrid zucchini variety, with a round shape reminiscent of a billiard ball except ours are much bigger. They are similar in taste to the italian zucchini. They are firm and very mild-tasting. Eight ball squash may be substituted for zucchini in most recipes. The size and shape of this summer squash variety are ideal for stuffing.

                            Eight ball squash: $1.50 per pound

                            Butternut Squash

                            It has a sweet, nutty taste similar to that of a pumpkin. It has yellow skin and orange fleshy pulp. When ripe, it turns increasingly deep orange, and becomes sweeter and richer. Butternut squash can be roasted, toasted, be puréed (to make a soup) or mashed into soups, casseroles, breads, and muffins.
